HOME-MADE ICECREAM


                                          
Ingredients

   1. Milk                          3.5 cups  (700 ml)
   2. milk powder            4tbsp  heaped
   3. Sugar                         6tbsp
   4.C.M.C                          1\2tsp   (emulsifier) correct measurement
   5. G.M.S                         1tsp       (stabilizer)    correct measurement
   6. Liquid glucose          1tbsp    shining
   7. Water                         1\2 cup ( 100 ml)
   8. cream                         200 ml (1 cup) whipping cream , Amul fresh cream, etc
                                           (whipping cream is better)


Procedure
  • Dissolve  C.M.C , G.M.S and liquid glucose in half a cup of water and mix well. Cook this in a separate pan till thick. Avoid maximum balls  by stirring it.
  • Boil 3 cups of milk for 5 minutes in high flame.
  • Dissolve milk powder sugar and sugar in 1\2 cup of milk and add it to the boiling milk.Then boil this mixture for 5 minutes in high flame.
  • Add C.M.C, G.M.S and Liquid glucose and mix  it to the boiling milk again cook for 4 minutes. (stir continuously)
  • Remove from heat and then strain and cool it.Then transfer it to a container and leave it to set in the freezer till firm.
  • Remove from freezer and wait for 3 minutes ( ice will not melt fully) and beat for 8-10 minutes.
  • Add essence, colour( if needed), and cream and beat for another 2 minutes.
           ( If it is whipping cream , whip the cream separately and mix it to the above mixture and mix it well. If it is any other fresh cream , add it to the above mixture and beat it. If we use whipping cream we will get a large quantity of ice cream )
  • Transfer it to an ice cream container and keep it in the freezer.


 Note:-
        For different taste and smell, we can use

         1. vanilla essence      2 tsp

         2. coffee                       2-3 tsp coffee powder and mix it in a little milk.

         3. chickoo                   a small quantity of  fresh crushed chickoo.
